MATCHA & STRAWBERRY CHIA PUDDING
Ingredients:
1 tsp matcha powder (or more if you like it stronger)
40ml filtered water, heated to 80 degrees
1 cup milk of choice
1 tbsp maple syrup
6 tbsp chia seeds (5 tbsp for the pudding, 1 tbsp for the jam)
1 cup sliced strawberries (fresh or frozen)
Instructions:
Step 1
Whisk the matcha & water in a matcha bowl using a matcha whisk until a light microfoam appears.
Step 2
In a bowl, combine the milk, whisked matcha, 5 tbsp chia seeds & maple syrup. Stir well & set aside for the chia seeds to absorb the liquid & thicken.
Step 3
Add the strawberries to a pot over low to medium heat & stir continuously until soft & mushy. Mash the strawberries, then stir in the remaining 1 tbsp chia seeds. Continue stirring until a jam like consistency forms, then remove from the heat.
Step 4
Layer the matcha chia pudding with the strawberry jam in a bowl or glass & enjoy!
Ingredient Benefits:
(with a focus on gut health & the nervous system)
Matcha
Matcha is rich in L theanine, an amino acid that promotes calm, focused energy by supporting relaxation without drowsiness, which benefits the nervous system. It is also high in catechins, particularly EGCG, powerful antioxidants that support reducing inflammation. These polyphenols also nourish beneficial gut bacteria, supporting a balanced microbiome.
Chia seeds
Chia seeds are rich in soluble fibre, which forms a gel that feeds beneficial gut bacteria & helps supports regular bowel motions. They also provide omega 3 fatty acids, which help calm inflammation & support immune balance. Magnesium & tryptophan in chia support the nervous system & may help promote calm & restful sleep.
Strawberries
Strawberries are high in vitamin C & polyphenols such as anthocyanins, antioxidants that help calm inflammation. Their fibre also feeds beneficial gut bacteria, supporting a healthy microbiome.
Maple syrup
Maple syrup is a natural sweetener that contains manganese, zinc & a range of polyphenols with antioxidant properties. These plant compounds may help calm inflammation. Its gentler impact on blood sugar compared to refined sugar can help support steady energy & a more balanced mood, though it is best in moderation.
